These sugar cane mill rolls are part of the Pioneer Mill outdoor exibit located at 275 Lahainaluna Road in the historic whaling town of Lahaina, Maui.

Pioneer Mill Co. exhibit displays 225-foot tall restored smokestack, antique mill and cane field equipment, interpretive signs and sugar train locomotive engines. It is open to the public daily from dawn to dusk. Admission is free.

The sign reads:

"This mill roll was one of a set of five mill rolls located just inside the mill building. Each set consisted of two rolls on the bottom and one roll on the top. The grooves on the rolls fit into each other and squeezed the juice from the freshly shredded cane as it passed through the set of rolls. At the end of the mill roll series, the crushed cane fiber, known as bagasse, went up a conveyor into the Bagasse House where it was burned as fuel in the boiler to make steam. This steam was then used to spin a turbine which in turn spun an electrical generator to make electricity. The electricity was utilized in the factory and throughout the plantation. Exhaust steam from the turbine was used to power the mill rolls in the crushing plant. Exhaust steam from the mill rolls went to the boiling house to fuel the evaporation process which rendered the juice into thick syrup. The syrup mixture was then spun in a centriguge to separate the molasses from the crystallized sugar."
