Jistebnice is first mentioned as a market village under the ownership of the Rožmberks in 1262.
The Gothic St. Michael's Church from the 14th century stands in the square. It was founded in the place of the original Romanesque sacral building. Its Baroque appearance originates from the last reconstruction, which finished in 1718. The Pseudo-Gothic town hall, which is situated in the square too, is from 1889.
The small chateau is situated on the southern outskirts of the town. It was built in the style of the English castle in Windsor in the 19th century and it is surrounded with the English park.

Jistebnice je poprvé pripomínána jako trhová osada v roce 1262, kdy patrila Rožmberkum. Jejich panství zde skoncilo ve druhé polovine 15. století. Tehdy již byla Jistebnice témer 100 let mestem.

Na námestí stojí puvodne gotický kostel svatého Michaela ze 14. století, který byl založen na míste starší románské stavby. Jeho poslední prestavba byla barokní a skoncila v roce 1718. Pseudogotická radnice, též na námestí, pochází z roku 1889.

Na jižním okraji mesta stojí v 19. století vybudovaný zámecek, postavený rodem Nádherných z Borotína ve stylu anglické gotiky a obklopený anglickým parkem.
Na návrší Vyšehrad nad mesteckem stojí kaple svaté Márí Magdaleny. Z krížové cesty, která k ní vedla, se dochovalo 13 kamenných krížu. Kapli vystavel na míste bývalého staršího kostelíka roku 1861 šlechtic Ludvík Karel Nádherný.
