Usually the white lion is a symbol for Edward IV. Although this building is quite old it certainly doesn’t date back to 1483 when he died.

The sign shows a the lion on a red background in the form you would expect to see in a coat of arms. In heraldic terms it is a 'proper lion rampant'.
