"Štramberské uši (The Štramberk Ears)"

At the beginning of May in 1241 the Tatars streamed into Moravia along the river Odra. People left their houses and run to the near precipitate and inaccessible hill Kotouc. Immeasurable hordes of Tatars settled under the Kotouc and get ready to attack. The night before the Ascension of Christ a wild storm broke out. Christians hidden on Kotouc took advantage of it, dig through the dams of the pond and floods of water inundated the camp of the Tatars. Each year, at the Ascension the memory of the miraculous salvation of the Christians from the Tatars is celebrated by the fair of Štramberk. ln Štramberk, ears of gingerbread are made and sold in memory of the Tatars who cut off the ears off the massacred Christians and sent them in sacs to their khan. lt is a legend? Or a real story? That's question, but numerous bakeries in Štramberk are producing these really tasty sweets...

Genuine Stramberk ear should be light brown, firm but not brittle and should have a balanced taste. It takes years of experience to find the right proportion of flour, honey, sugar, star anise, cloves, and that special something which distinguishes the Stramberk ears from any other similar cookies. From 2007 the Stramberk ears are an E.U. registered trademark.
