Canadians need not fret over the selection of gifts for friends and relatives when undertaking a trip overseas – after all we have maple products! Who amongst us does not relish sugar bush season, that rite of spring ushered in by the start of successive nights of freezing accompanied by daytime highs over zero. This circumstance allows for the flow of sap in the six maple tree varieties which have a product sweet enough to produce a commercial grade syrup. Urbanites take to the country over a four to six week period to watch the sap being distilled, to consume pancakes and syrup and of course to enjoy the traditional horse drawn rides through the woods. Typically, an Ontario sugar bush operation produces maple syrup, sugar, butter, jelly and maybe best of all, maple taffy. Wheeler’s Sugar Bush started out in 1978 with 2300 trees and now comprises over 15,000 taps. The rural property in Lanark County incorporates a pancake house and also a museum featuring artifacts from the trade. Both buildings were fashioned from recycled cedar logs salvaged from local barns. Canada’s maple industry flourishes in a belt from Nova Scotia through New Brunswick and Quebec to Ontario. Maple products are tied into our national identity and represent a major export unsurpassed by any other nation. Maple Products were designated an event of national significance in 2008 and plaqued by the federal government in 2009. Atypically, this designation was plaqued in three places, here in Lanark County, Ontario, at Wheeler’s but also at two Quebec locations, one at Mont-Saint-Hilaire and another at Plessiville.
