Hard Eight presently has three locations, with the others in Stephenville and Coppell. They are a rarity in the DFW Metroplex: As opposed to ordering a plate with a combination of meats like you do at most places, you stand in front of the pit, telling the pit boss what you want (by the pound or fraction thereof), and off you go. This is more in line with the experience you'll get in Central Texas and the more traditional Texas BBQ joints. If you're a purist, eat with your fingers, but if not, or you get sides, they have plenty of silverware for you. Just the other side of the pit, they'll ask if you want the usual onions, pickles, or bread.
While their full menu is available online, the big stuff here is brisket, chicken, turkey, ham, sausage (regular and jalapeño, with the seeds in!), pork ribs, ribeye, sirloin, pork chops, and prime rib (Friday through Sunday only). They do offer sides, including salad and baked potatoes, and their house beans are free if you're dining in. They offer beer, wine, soft drinks, and the usual choice of sweet or unsweetened tea. If you still have room after your meal, dessert takes the form of cobbler, pie, or banana pudding.
For those on the cheap, most menu items are $12.50/pound, so order as little as you can afford, although $6 will get you a decent sandwich. For those who want to "pig out," order as much as you like, although there are some family packs on the menu if you're looking for an all-in-one deal of some kind.
They have plenty of seating, and are child-friendly. Of course, food can be taken to go, and they also cater. Cash and credit cards accepted, hours available on a screen shot in the gallery.
