L'Impressionniste, un petit restaurant qui a grandi au fil du temps, vient de fêter ses vingt-ans. Mais, avant....
Il y avait dans le Vieux-Montréal, au coin des rues St-Paul et St-Sulpice, un restaurant qui a marqué de belles heures les années soixante-dix. C'était la Belle poule. Aucune ambiguïté. Ce nom est celui qu'ont porté trois frégates françaises célèbres. Au sous-sol, il y avait un Vieux Rafiot, bar et restaurant, restaurant et bar, selon les heures. Il avait une particularité. Le service de table était chaussé de patins à roulettes.
Jean-Pierre Hans faisait partie de cet équipage au pied marin. Après un court passage sur la Rive sud de Montréal où il avait ouvert Les Loufiats, c'est à Saint-Eustache qu'il a posé ses patins.
On est loin, dans l'espace et dans le temps, de l'époque de ces peintres qui a inspiré le nom du restaurant. Mais le décor, l'ambiance peuvent l'évoquer. Il y a quelque chose de frais, et de non commercial, dans la manière dont les lieux sont conçus. Des voilages légers transforment l'éclairage, la succession des pièces "à grandeur humaine", une jolie terrasse jouent bien le jeu de la convivialité et de la détente. On n'a pas oublié, évidemment, les évocations "impressionnistes" sur les murs. Et particulièrement cette grande murale, dans le fond de la salle à manger, où revit le Déjeuner des Canotiers de Renoir.
L'Impressionniste est un restaurant français. la table est fidèle à la tradition des foies de veau, confit de canard, carré d'agneau, bisque de homard, filet et contre-filet, mais en réservant les surprises du jour. Il y a des accents asiatiques qui se promènent par ci par là, des utilisations de produits de la région. par exemple, un filet de cerf de Boileau, sauce au cassis d'Intermiel et Téquila.
Et le maître des lieux n'a rien perdu de son savoir-faire.

There was in Old Montreal, corner of St Paul and St-Sulpice, a restaurant that marked the heyday of the seventies. It was the Belle hen. No ambiguity. What is the name that brought three French frigates famous. In the basement, there was an old tub, restaurant and bar, restaurant and bar, by hours. He had one peculiarity. Catering was wearing roller skates.
Jean-Pierre Hans was part of this crew at sea legs. After a short stint on the South Shore of Montreal where he had opened the waiters, it was at Saint-Eustache he asked his skates.
We are far, in space and time, at the time of those painters who inspired the name of the restaurant. But the decor, the ambiance can evoke. There is something fresh, and non-commercial, in the way places are designed. Curtains of light transform the lighting, the succession of parts "to human greatness," a nice terrace well play the game of conviviality and relaxation. We did not forget, of course, the evocations "impressionist" on the walls. And particularly the large mural in the back of the dining room, which relives the Boating Party by Renoir Luncheon.
The Impressionist is a French restaurant. the table is in the tradition of calf livers, duck confit, rack of lamb, lobster bisque, filet steak and cons, but reserving the surprises of the day. There are Asian accents that roam here and there, uses products of the region. For example, a net Boileau venison, currant sauce and Intermiel of Tequila.
And the master of the house has lost none of its expertise.
