This pub is owned by Joseph Holt a local brewery based in Manchester, and has a free comedy club on Wednesday nights.

I’ve only been able to find one website with information about how the pub got its name. It implies that it is a pun on evolution and the ape has eaten the forbidden fruit and evolved to invent beer.

The web site also states that the name is just a made up one and it’s not clear whether the evolution idea is just the author’s fevered imagination or he knows for a fact that it’s true. It’s a nice idea though.

The brewery has been family run since 1849 and most of their approximately 100 pubs have traditional names. However there is another nearby one called The Old Monkey. This was a purpose built building in 1993 so perhaps they chose unusual names for newly acquired pubs.
