This pub is clearly named after the castle that is no more that 200 yards away from the back door.
This is a Norman castle and the site of the largest keep in Britain. It is built on the foundations of a Roman temple. Building started between 1069 and 1076. It has served as a Royal castle, a county prison and also as a centre for Witchfinder General, Matthew Hopkins to interrogate and imprison supposed witches in 1645.
