Sometimes the green man would refer to Robin Hood (from his habit of wearing Lincoln Green). On other occasions, it would be a reference to the spirit of the forest where his face would be made up largely of greenery and might have strands growing from his mouth as it is here.
Sadly, the sign is in very poor condition, revealing that the picture appears to have been printed on a thin medium and pasted onto the board. Where this type of construction is used it would be normal to cover the picture with a sheet of perspex.
