In keeping with Athens tradition, the creator of politics and government, the city of Athens, Texas has city council meetings twice monthly on the second and fourth Mondays.
A little known fact of Athens, Texas is that a local farmer, JB Henry, was the creator of the black-eyed pea as we Southerners know it today. It was a legume grown for livestock feed, but Henry mastered the drying technique and when it was featured in a national newspaper, the Humble Cow Pea became common table food and even good luck for those that could get them. Now it is tradition in the south to eat Black-Eyed Peas on New Years Day to bring the year in right.
