There appears to be little available history on the public house, however, I offer.
The naming of the Inn - On the approach to St Ives and on the hill is a hotel resort called Tregenna castle [https://www.tregenna-castle.co.uk/]. The hotel does have castellated facades, however the age of the two premises, in my view, do not match. Perhaps there was a castle within the the Hotels grounds??
Given that the front windows are stained glass, with the castle and name inset, then in all probability the name has never changed.
St Ives is now a tourist "honey pot" and attracts thousands of visitors each year. Eating and drinking houses (Inns, Restaurants -Licensed premises) are everywhere all vying for business, each offering different themes. The Castle in is adjacent or near to some four licensed premises.
