Pâtissier de formation, Thierry Bourdin, dès l'âge de 11 ans, allait fréquemment chez le boulanger de La Mothe, « même pour y faire la plonge?! ».Suivront un apprentissage, commencé à 14 ans, et une carrière tout entière consacrée à la boulangerie-pâtisserie. C'est même en travaillant en saison sur la côte vendéenne qu'il fera connaissance de celle qui est devenue son épouse, Maryline, et qui avait choisi une voie professionnelle dans la vente. De pétrin en magasin, ils exerceront leur passion à Châtelaillon, Chef-Boutonne et La Mothe-Saint-Héray, avant leur arrivée à Prahecq, près de Niort où leurs deux filles poursuivent leur scolarité.
